The Birth of Irish Eats
In 2023, I attended the Longs Peak Scottish-Irish Highland Festival in Estes Park, Colorado, and was surprised that there was no Irish food. Curious if this was common, I researched other Irish festivals across the United States, including Milwaukee’s Irish Fest—the largest in the world—and I discovered the same thing: incredible music, artisans, and culture, but no Irish food. It felt like something important was missing; the Holy Spirit moved and sparked the idea for Irish Eats.
Food has always been a way I connect with my Irish heritage and my homemade corned beef has long been a favorite among friends and family. The challenge was figuring out how to make traditional dishes festival-friendly. That’s how our signature item, the Corned Beef Dinner Kabob, was born—skewers stacked with tender corned beef, potato, carrot, and cabbage.
From there, the menu grew to include dishes with both tradition and creativity:
Irish Banger Sandwich – Traditional Irish pork sausage on a potato bun with rich onion gravy
Scottish Stovies – Slow-cooked potatoes and beef in savory drippings and broth
Shepherd’s Pie – Irish lamb stew with onions and carrots, topped with mashed potatoes
Reuben Sausage Sandwich – a unique sausage for a twist you won’t find anywhere else
I support the unification of Ireland and belong to the Ancient Order of Hibernians USA. To support this cause, I will be donating 10% of my profits to Freedom For All Ireland through the Hibernians. Also, feeling blessed that I get to share food at festivals in different communities, I will be donating 10% of profits to a local charity, preferably one helping reduce hunger.
Irish Eats was founded on heritage, hospitality, and heart. I’m honored to share a taste of Ireland at festivals across the country and to give back in the process.

He will be serving the American/Irish favorite corned beef and cabbage – but on a skewer, along with three types of Irish/Celtic dishes, as well as Reuben Sausage and Irish Banger Sandwiches.
